TRADITIONAL BIRTHDAY CHEESE CAKE
CONFESSION: I DON’T LIKE CAKE
Well I like the cake just fine actually. I really don’t like icing. Such an unpopular opinion, I know. Katherine basically believes I am broken. In her opinion cake is the necessary serving vessel required to deliver as much icing into ones gullet as possible. In short she loves icing. The sweater the better.But it wasn’t her birthday today! Oh no! Today it’s all about me!
So instead of cake for my birthday, we do No Bake Cherry Cheese Cake, with Eagle Brand Sweetened Condensed Milk
No bake cherry cheese cake! And with a family of 7 it’s always a good idea to make double!
The kids are officially big enough to handle making the cheesecakes for me all on their own! It’s one of my favourite childhood foods, and gives me so much comfort. Knowing that they can make it, and that everytime they do, they’ll think of me, and how much I love them gives me ALL OF THE FEELS!
Here’s to making memories we can taste!
No Bake Cherry Cheese Cake
GRAMAH CRACKER CRUST
1 1/2 cups graham crackers
1/4 cup Brown sugar, packed
1/2 tsp Cinnamon
1 Pinch Salt
Crush the crap out of the graham crackers, mix them up with the cinnamon and the salt and brown sugar.
Drizzle the butter on top and mix it up with a fork, breaking up any of the last bits as you go. Press it into a pie plate and then pop it in the oven at 325 degrees for 10 minutes. Let it chill completely, and then fill it up with yummy cream cheese goodness.
Alternatively, I grew up eating the store bought crust from the grocery store and I like that just fine. I just like this even better.
FILLING
1 - block of cream cheese
1 - can of sweetened condensed milk
1- tsp Vanilla Extract
1/4-1/3 Cup - Lemon Juice (depending on how tart or sweet you like it)
Whip with hand blender or mixer, pour into graham cracker crust, add fruit topping, my personal favourite is canned cherries, cause I’m classy like that, and then let it chill for an hour or so.
